Ingredients

2 tbsp olive oil

1/2 large yellow onion, finely diced

1 1/2 tsp brown sugar

1/4 cup mayonnaise

1/4 cup plain Greek yogurt

1 tsp apple cider vinegar

1/2 tsp garlic powder

1 lb ground beef (80-85% lean)

Kosher salt and freshly ground black pepper

For Serving:

Roasted potatoes or French fries (homemade or from frozen)

Sliced tomatoes

Romaine lettuce

Instructions

  1. Make the caramelized onion aioli: Heat olive oil in a skillet over medium heat. Add diced onion with a pinch of salt and cook for about 10 minutes, stirring occasionally, until soft. Add brown sugar and cook for another 5-10 minutes until golden and jammy. Stir in mayonnaise, Greek yogurt, apple cider vinegar, and garlic powder. Season with salt and pepper.
  2. Cook the burger patties: Divide ground beef into 5-6 portions and form patties. Season with salt and pepper. Heat the skillet over medium-high heat and sear the patties for 2-3 minutes per side, cooking to your desired doneness.
  3. Assemble the burger bowls: Layer chopped romaine lettuce in each bowl. Add sliced tomatoes, fries (or roasted potatoes), and a burger patty on top. Spoon the caramelized onion aioli over the burger patty.
  4. Serve immediately or store the components separately for meal prep.

Notes

  • The caramelized onion aioli can be made ahead of time and stored in the fridge to allow the flavors to meld together.
  • For a low-carb option, substitute fries with roasted cauliflower or zucchini fries.
  • To make it gluten-free, use gluten-free fries and adjust the aioli ingredients as needed (such as using dairy-free yogurt for vegan options).
  • If desired, add cheese like cheddar, Swiss, or provolone on top of the burger patties before serving.
  • For a healthier option, serve the burger bowls with roasted sweet potatoes or a simple side salad instead of fries.
