Ingredients

  • 8.4 ounces instant ramen noodle packs (2 packs) (discard seasoning packets)
  • 1 tablespoon gochujang (mild Korean chili paste)
  • 1 tablespoon gochugaru (Korean chili flakes)
  • 2 teaspoons low sodium soy sauce
  • 1 teaspoon chicken bouillon powder or paste
  • 1 tablespoon rice vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon granulated sugar
  • ½ teaspoon toasted sesame oil

For Topping

  • 2 sliced scallions
  • 2 sunny side up fried eggs

Instructions

  1. Prepare the sauce: In a small bowl, thoroughly mix together gochujang, gochugaru, soy sauce, chicken bouillon, rice vinegar, garlic powder, sugar, and toasted sesame oil until you achieve a thick paste consistency. Set aside to let the flavors meld.
  2. Cook the noodles: Boil the ramen noodles according to package instructions without using the seasoning packets. Once cooked, reserve some of the cooking water before draining the noodles.
  3. Toss noodles with sauce: Place the drained noodles in a large bowl. Add the prepared sauce on top and toss gently to coat the noodles evenly. If the sauce is too thick, add the reserved ramen water one tablespoon at a time to thin the sauce to your preferred consistency.
  4. Prepare toppings and serve: Garnish the sauced noodles with sliced scallions and top each serving with a sunny side up fried egg. Serve immediately for best flavor and texture.

Notes

  • You can adjust the heat by using more or less gochugaru or gochujang depending on personal preference.
