Ingredients

2 chicken breasts

1/2 block softened cream cheese (125g)

1 cup shredded mozzarella

1/2 cup buffalo sauce

1 tsp garlic powder

12 tbsp ranch seasoning

2 green onions, thinly sliced

12 50/50 flour-corn tortillas

Neutral oil for frying

Ranch dressing, for topping

Instructions

  1. Cook the chicken breasts in a pan until fully cooked, seasoning as desired. Remove from heat and shred with two forks.
  2. Grate mozzarella and slice green onions.
  3. In a mixing bowl, combine shredded chicken, softened cream cheese, mozzarella, buffalo sauce, garlic powder, ranch seasoning, and green onions. Mix well.
  4. Microwave tortillas for 30 seconds to make them more pliable.
  5. Spoon 1-2 tablespoons of filling onto the edge of each tortilla and roll tightly.
  6. Heat neutral oil in a pan to cover the bottom by a few centimeters. Fry taquitos in batches, flipping once, until golden brown on both sides.
  7. Remove and drain on paper towels. Drizzle with extra buffalo sauce, ranch, and more green onions. Serve hot.

Notes

  • Use a mix of flour and corn tortillas for better flexibility and texture.
  • Softening the cream cheese helps ensure it mixes smoothly with other ingredients.
  • Store-bought rotisserie chicken can save time.
