Ingredients

2 flatbreads (14.5 ounces, or equivalent)

2 teaspoons light olive oil

½ cup buffalo wing sauce (more if desired)

1 ½ cups diced cooked chicken (approximately ¾ pounds)

1 cup shredded mozzarella cheese

⅓ cup blue cheese dressing

⅓ cup sliced green onions (3 green onions)

Instructions

  1. Preheat your oven to 425°F. Place the flatbreads on a parchment paper-lined sheet pan and lightly brush the edges with olive oil.
  2. Bake the flatbreads for about 5 minutes, until they are warmed and just starting to crisp.
  3. Remove the flatbreads from the oven and spread the buffalo sauce evenly over both flatbreads. Then, sprinkle the diced chicken and shredded mozzarella cheese over the top. Drizzle with blue cheese dressing.
  4. Return the flatbreads to the oven and bake for 12-15 minutes, until the edges are slightly browned and the cheese has melted. For an extra crispy top, place the flatbreads under the broiler on high for the last 1-2 minutes.
  5. Remove from the oven and sprinkle with sliced green onions and additional buffalo sauce or blue cheese, if desired. Cut into small squares for an appetizer or large slices for dinner, and serve with a side salad for a complete meal!
