Ingredients

4 Italian tomatoes, chopped

1 clove garlic

4 tbsp extra virgin olive oil

5 fresh basil leaves, chopped

1/2 tsp sea salt

4 slices crusty bread

1 tbsp balsamic vinegar (optional)

1 small onion, finely chopped (optional)

Instructions

  1. Chop the tomatoes into small cubes. Place in a bowl with sea salt, half of the olive oil, and onion if using. Let sit for 10–15 minutes at room temperature.
  2. Toast the bread slices on a grill or in a toaster until crisp and golden.
  3. Rub both sides of the toasted bread with the garlic clove.
  4. Brush one side of each slice with the remaining olive oil and sprinkle with sea salt.
  5. Top each slice with the marinated tomato mixture and chopped basil leaves.
  6. Optionally, drizzle with more olive oil, sprinkle additional sea salt, and add a touch of balsamic vinegar before serving.
