Ingredients

1/2 cup butter

3 ounces bittersweet chocolate (chopped)

1/2 cup granulated white sugar

2 large eggs

1 teaspoon vanilla extract

1 cup all-purpose flour

2 teaspoons baking powder

1/4 teaspoon salt

1 cup milk

Instructions

  1. In a small saucepan or microwave-safe bowl, melt the butter and chopped bittersweet chocolate together, stirring until smooth.
  2. Add the sugar to the melted butter and chocolate mixture, and stir until well combined.
  3. Add the eggs and vanilla extract to the bowl, whisking until the mixture is smooth.
  4. Add the flour, baking powder, and salt, mixing until fully incorporated.
  5. Gradually whisk in the milk until the batter is smooth and free of lumps.
  6. Preheat and grease your waffle iron. Pour 1/2 cup to 1 cup of batter (depending on the size of your waffle iron) onto the hot iron and cook until the waffle is crispy on the outside and gooey on the inside.
  7. Serve immediately with toppings like vanilla ice cream, whipped cream, or chopped nuts. Enjoy!

Notes

  • For a richer flavor, add a handful of chocolate chips or a splash of coffee to the batter.
  • If you don’t have a waffle iron, you can make brownie pancakes by cooking the batter on a skillet over medium heat.
  • For extra crispy waffles, make sure to grease your waffle iron well and avoid overloading the batter.
