Ingredients

175 g fine semolina

225 g flour

7 g instant yeast

12 g granulated sugar

7 g salt

30 ml olive oil

220 ml water

40 g butter

1 egg

100 g grated cheese

100 g yellow onion, chopped

20 g fresh parsley

2 g ras el hanout (Moroccan spice mix)

20 ml olive oil

500 g chicken, cut into strips

5 g ras el hanout

2 g cayenne pepper

3 g garlic powder

3 g onion powder

1 g dried chives

3.5 g salt

30 g mayonnaise

30 g sweet chili sauce

15 g sambal (chili paste)

35 g red onion, chopped

75 g green olives, sliced

100 g cheddar cheese, sliced or shredded

650 g fresh fries

Instructions

  1. Make the dough: In a deep bowl, combine the flour, fine semolina, yeast, sugar, salt, olive oil, and water. Mix well and knead for 10-12 minutes until smooth and elastic.
  2. Let the dough rise: Cover the dough and let it rise for 1 hour in a warm place, or until it has doubled in size.
  3. Prepare the cheese mixture: In a separate bowl, mix the grated cheese, yellow onion, parsley, and ras el hanout. Set aside.
  4. Shape the dough: Once the dough has risen, punch it down and divide it into 9 equal portions. Shape each portion into a round ball.
  5. Roll the dough: Take one dough ball and roll it out with a rolling pin into a 17×20 cm rectangle.
  6. Add the butter and cheese: Melt the butter and brush it over the rolled-out dough. Sprinkle the cheese mixture evenly on top.
  7. Form the parcels: Fold the dough over the filling to create a packet.
  8. Prepare for baking: Place the dough parcels on a baking sheet lined with parchment paper. Brush them with a beaten egg and sprinkle some of the cheese mixture on top.
  9. Let the parcels rise: Let the parcels rise for 30 minutes in a warm place until they have doubled in size.
  10. Bake: Preheat the oven to 200°C (392°F). Bake the parcels for 12-18 minutes or until golden brown. Cover with a clean kitchen towel to keep them soft.
  11. Prepare the chicken mixture: Heat olive oil in a frying pan over medium heat. Add the chicken and cook with ras el hanout, cayenne pepper, garlic powder, onion powder, chives, and salt for 4-5 minutes.
  12. Add the mayonnaise, sweet chili sauce, and sambal. Stir in red onion and olives and cook for another minute. Remove from heat and add the cheddar cheese. Let it melt into the chicken mixture.
  13. Serve: Fill the freshly baked bread rolls with the warm chicken mixture and serve with crispy fries and fresh vegetables.

  • Vegetarian: Replace the chicken with grilled vegetables like zucchini, bell peppers, and mushrooms.
