1 cup panko breadcrumbs
2 large eggs
1 cup shredded cheese (Cheddar, Colby, or Tasty cheese)
2 shallots/scallions, finely sliced

1 cup plain yogurt
1 teaspoon lemon zest
1 tablespoon lemon juice
