Ingredients

For the Scrambled Eggs

  • 1 tbsp salted butter
  • 6 large eggs
  • 1/4 cup milk

For the Bruschetta Topping

  • 2 Roma tomatoes, deseeded and diced
  • 1/2 roasted red pepper, diced
  • 1/2 cup basil, finely chopped

For the Toast

  • 8 slices of bread
  • 3 tbsp olive oil

Instructions

  1. Make the toast: Preheat your oven. Lay the bread slices in a single layer on a baking sheet and drizzle them lightly with olive oil. Place the baking sheet in the oven and cook for 5 minutes or until the bread is crunchy and browned to perfection.
  2. Make the scrambled eggs: Melt the salted butter in a medium-sized pan over medium heat. In a bowl, crack the eggs and add the milk, whisking until well combined. Pour the mixture into the pan and gently break up the eggs with a spatula to scramble them. Cook for about 4 minutes until the eggs are fully cooked but still soft.
  3. Make the bruschetta: Chop the deseeded tomatoes, roasted red pepper, and basil finely. Add them to the pan with the scrambled eggs and toss gently, cooking for another 2 minutes to blend the flavors and warm the veggies through.
