Ingredients

Peach Mixture

  • 2 and 1/2 pounds fresh ripe peaches (pitted and cut into 1/4-inch slices)
  • 2 and 1/2 Tablespoons (35ml) bourbon
  • 2 Tablespoons (28ml) freshly squeezed orange juice
  • 1/2 teaspoon orange zest
  • 1 teaspoon vanilla extract
  • 1/2 cup (106g) light brown sugar, packed
  • 1/4 teaspoon ground cinnamon
  • 3 tablespoons cornstarch

Pecan Crisp Topping

  • 1/2 cup (113g) unsalted butter (cut into cubes, room temperature)
  • 3/4 cup (75g) old-fashioned oats
  • 1/2 cup (57g) pecans (finely chopped)
  • 1/4 cup (50g) granulated sugar
  • 1/2 cup (106g) light brown sugar (packed)
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground cardamom (optional)
  • 2/3 cup (80g) all-purpose flour
  • For Serving (Optional)

    • Ice cream

Instructions

  1. Preheat Oven: Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius) to prepare for baking the crisp.
  2. Prepare Peach Mixture: In a 9×13-inch baking dish or 12-inch skillet, combine the sliced peaches, bourbon, freshly squeezed orange juice, orange zest, vanilla extract, light brown sugar, and ground cinnamon. Toss all ingredients well to ensure the peaches are thoroughly coated.
  3. Add Cornstarch: Sprinkle the cornstarch over the peach mixture and toss again to combine evenly. Set this mixture aside to allow the cornstarch to start working while preparing the topping.
  4. Prepare Butter: Cut the unsalted butter into cubes and set it aside at room temperature, ready to be incorporated into the topping.
  5. Mix Topping Dry Ingredients: In a large bowl, combine the old-fashioned oats, finely chopped pecans, granulated sugar, light brown sugar, ground cinnamon, ground cardamom (if using), and all-purpose flour. Mix these dry ingredients together thoroughly.
  6. Incorporate Butter into Topping: Add the cubed butter to the dry topping ingredients. Using two forks or a pastry blender, cut the butter into the mixture until it becomes a coarse meal texture with pea-sized butter pieces.
  7. Assemble Crisp: Evenly sprinkle the prepared pecan crisp topping over the peach mixture in the baking dish or skillet.
  8. Bake: Place the baking dish or skillet in the oven and bake for 40 to 45 minutes. Bake until the peaches start to burst and release their juices, and the topping turns a lovely golden brown color.
  9. Rest and Serve: Remove from oven and let the crisp sit for about 15 minutes to allow the juices to settle. Serve warm, ideally with a scoop of ice cream for added indulgence.

Notes

  • Use ripe but firm peaches to ensure they hold their shape during baking.
  • Ground cardamom is optional but adds a lovely warm spice note; omit if desired.
  • Allowing the crisp to rest before serving helps the juices thicken and improves texture.
  • For a nuttier flavor, toast the pecans lightly before chopping and adding to the topping.
  • This crisp can be prepared ahead up to the assembly step and refrigerated before baking.
  • Serve with vanilla ice cream or whipped cream for an extra special dessert.
