Ingredients

2 cups fresh blueberries

3 ripe peaches, diced

2 Persian cucumbers, thinly sliced

1/2 cup feta cheese, crumbled

3 tbsp fresh lemon juice

1 tsp Dijon mustard

1 tbsp honey

1/4 cup olive oil

2 tbsp fresh basil, finely chopped

1/2 tsp kosher salt

1/4 tsp black pepper

Instructions

  1. In a large serving bowl, combine blueberries, diced peaches, sliced cucumbers, and crumbled feta.
  2. In a jar with a lid or a small bowl, whisk together lemon juice, Dijon mustard, honey, olive oil, chopped basil, salt, and pepper until well combined.
  3. Pour the vinaigrette over the salad and gently toss to combine.
  4. Taste and adjust seasoning as needed. Garnish with extra basil, if desired.
  5. Serve immediately or refrigerate until ready to serve.
