  • 1 cup frozen wild blueberries
  • 1/4 cup packed mint leaves, plus 5-6 more leaves for garnish
  • 1 tablespoon honey

  • 1 cup filtered water
  • 8 ounces sparkling water

Instructions

  1. Blend Ingredients. To a high-powered blender, add the frozen blueberries, mint leaves, honey, and if desired, the zest and juice of one lime. Pour in one cup of filtered water. Blend on high for about 20 seconds until smooth. Taste the mixture and add more honey if you prefer it sweeter.
  2. Strain the Mixture. Pour the blended mixture through a fine-mesh strainer into a glass jar or measuring cup. Use a spoon to press the juice through the strainer, leaving the pulp behind. Discard the pulp. Taste the juice and adjust the sweetness if necessary by adding more honey.
  3. Assemble the Mocktail. Fill your serving glass halfway with ice. Pour in the strained blueberry-mint juice until the glass is half full. Top off with 2-3 ounces of sparkling water or ginger ale, adding more if desired to your liking. Garnish with fresh mint sprigs and a few fresh blueberries for a festive touch.
