Ingredients

Oat Crumble Layers

  • 3/4 cup butter, softened
  • 2/3 cup sugar
  • 2/3 cup brown sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/3 cups all-purpose flour
  • 1 1/3 cups quick oats (uncooked)

Cream Cheese Filling

  • 8 ounces cream cheese
  • 1 (14-ounce) can sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1 egg yolk

Fruit Layer

  • 1 cup blueberries (fresh or frozen, or substitute with raspberries)

Instructions

  1. Prepare the Pan and Preheat Oven: Preheat your oven to 350°F (177°C). Line a 9×13-inch baking pan with parchment paper or coat it well with cooking spray to ensure the bars come out clean and easy to cut.
  2. Make the Oat Crumble: In a large bowl, cream together the softened butter, sugar, and brown sugar until light and fluffy. Stir in baking soda, salt, flour, and quick oats, mixing until a crumbly dough forms.
  3. Bake the Bottom Crust: Press half of the oat mixture firmly into the bottom of the prepared pan to form a solid base. Bake in the preheated oven for 13 minutes to set the crust.
  4. Prepare the Cream Cheese Filling: While the base is baking, place the cream cheese in a separate large bowl and stir until smooth and creamy. Gradually whisk in the sweetened condensed milk, making sure it’s well incorporated, then add the vanilla extract and egg yolk, and whisk until fully blended and silky.
  5. Assemble the Bars: Once the bottom layer is out of the oven, pour the cream cheese filling evenly over the baked crust. Gently spread it with a spatula. Evenly scatter the blueberries (or raspberries) across the cream cheese layer.
  6. Add the Topping: Sprinkle the remaining oat crumble evenly over the fruit and cream cheese layers. Gently press down to help it adhere.
  7. Bake Until Golden: Return the pan to the oven and bake for another 20-25 minutes, or until the edges are golden brown and the center is set.
  8. Cool and Slice: Allow the bars to cool completely in the pan. For neat slices, refrigerate the bars for at least 1 hour before cutting. Store leftovers in the refrigerator.

Notes

  • Bars are easier to slice cleanly if chilled before cutting.
  • You can substitute blueberries with raspberries or a combination of both for variety.
  • Use quick oats, not old-fashioned or steel-cut, for best texture.
  • If using frozen berries, do not thaw before adding to prevent excess moisture.
  • Store bars in the fridge in an airtight container for up to 5 days.
