Ingredients

2 cups all-purpose flour

2 tablespoons granulated sugar

1 tablespoon baking powder

½ teaspoon salt

2 cups buttermilk

¼ cup melted unsalted butter

2 large eggs

2 teaspoons vanilla extract

1 ½ cups fresh or frozen blueberries

¼ cup brown sugar

½ teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. In a separate bowl, whisk together buttermilk, eggs, melted butter, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
  5. Gently fold the blueberries into the batter.
  6. Pour the pancake batter into the prepared baking dish and spread evenly.
  7. Mix together brown sugar and cinnamon, then sprinkle over the top of the casserole.
  8. Bake for 25-30 minutes, or until the top is golden brown, and a toothpick inserted in the center comes out clean.
  9. Let the casserole cool for a few minutes before serving.

Notes

  • If using frozen blueberries, don’t thaw them before adding to the batter to prevent excess moisture.
  • For a dairy-free option, substitute the buttermilk with almond milk mixed with a teaspoon of lemon juice.
  • You can try other fruits like raspberries, strawberries, or a mix of berries in place of the blueberries.
  • For extra texture, add chopped walnuts or pecans on top before baking.
