Ingredients

Blueberry Syrup

  • ½ cup blueberries (fresh or frozen)
  • 1 tbsp light brown sugar (or other sugar)
  • 1 cup water (for syrup)

Tea

  • 1 bag tea (green, black, white, or fruit tea)
  • 1 cup boiling water (235 ml)

Tapioca Pearls (Boba)

  • ½ cup quick-cooking tapioca pearls
  • Water for boiling pearls (enough to fill pan)

Milk Tea Assembly

  • 1 cup milk of choice (unsweetened oat milk recommended)
  • Plenty of ice (if serving cold)
  • Optional sweetener such as maple syrup (to taste)

Instructions

  1. Make Blueberry Syrup: In a saucepan, combine the blueberries, 1 cup of water, and light brown sugar. Bring the mixture to a boil over medium-high heat, then reduce to a simmer and cook for 10 minutes until the blueberries are very soft.
  2. Mash and Strain Syrup: Remove the saucepan from heat. Use a fork to mash the softened blueberries, then pour the mixture through a sieve into a bowl, pressing to extract all the liquid. Discard solids or save for another use.
  3. Brew Tea: Place the tea bag in a mug and pour 1 cup (235 ml) of boiling water over it. Steep for 2-3 minutes, then remove the tea bag and allow the tea to cool to room temperature or chill as preferred.
  4. Cook Tapioca Pearls: Bring a pan of water to a boil and add the ½ cup of tapioca pearls. Let them simmer for about 5 minutes, or until they reach your desired chewy consistency.
  5. Drain and Soak Pearls: Drain the cooked tapioca pearls by straining them through a sieve or scooping them out with a spoon. Immediately soak the pearls in half of the prepared blueberry syrup and stir well to coat. Set aside.
  6. Assemble the Drink: Divide the soaked tapioca pearls evenly between two glasses. Add plenty of ice if desired. Pour the brewed tea, followed by the milk of your choice, and then add the remaining blueberry syrup for sweetness and color.
  7. Serve: Stir the drink well before serving. Add additional sweetener such as maple syrup if desired to enhance the sweetness further.

  • Use quick-cooking tapioca pearls for a faster preparation; regular pearls require longer cooking times.
  • Unsweetened oat milk works particularly well with the blueberry flavor but feel free to substitute any milk of your choice.
