Ingredients

Wet Ingredients

  • 3 ripe bananas, mashed
  • 1 large egg
  • ¼ cup brown sugar

Dry Ingredients

  • 2 cups rolled oats
  • ¼ cup whole wheat flour
  • ½ teaspoon cinnamon
  • ½ teaspoon baking soda
  • ¼ teaspoon salt

Add-ins

  • 1 cup blueberries

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350 degrees Fahrenheit. Lightly grease an 8 x 8 or 9 x 9 inch baking pan with cooking spray to prevent sticking and set aside.
  2. Mix Wet Ingredients: In a large mixing bowl, combine the mashed ripe bananas, egg, and brown sugar. Stir thoroughly until fully combined and smooth.
  3. Add Dry Ingredients: Add in the rolled oats, whole wheat flour, cinnamon, baking soda, and salt to the wet mixture. Stir well until all ingredients are evenly incorporated, forming a thick batter.
  4. Layer Batter and Blueberries: Pour half of the batter into the prepared baking pan, spreading it evenly. Sprinkle the fresh blueberries evenly over this layer. Then gently pour the remaining batter on top, covering the blueberries.
  5. Bake: Place the pan in the preheated oven and bake for 30 to 35 minutes. The bars are done when set, golden on top, and a toothpick inserted in the center comes out clean.
  6. Cool and Serve: Remove the pan from the oven and allow the bars to cool slightly before slicing into 12 squares. Serve warm or at room temperature.

Notes

  • Ripe bananas are important for sweetness and moisture; use bananas with lots of brown spots.
  • You can substitute rolled oats with quick oats for a softer texture, but the baking time may vary slightly.
  • For a gluten-free option, use gluten-free oats and flour alternatives.
  • Store bars in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
  • These bars freeze well; wrap individually for a quick snack anytime.
