Ingredients

1 tbsp unsalted butter, softened

2 slices sourdough bread

2 tbsp goat cheese

1/4 cup fresh blackberries

1/2 peach, thinly sliced

1/4 cup fontina cheese, shredded

1/4 cup Emmentaler cheese, shredded

Instructions

  1. Butter one side of each slice of sourdough bread.
  2. Heat a skillet over medium heat. Place bread slices buttered side down in the skillet and reduce heat to medium-low.
  3. Spread goat cheese on the exposed sides of each slice.
  4. On one slice, layer gently smashed blackberries, peach slices, fontina cheese, and Emmentaler cheese.
  5. Top with the second slice of bread, goat cheese side down.
  6. Cook for about 3 minutes per side, pressing gently and flipping once, until golden brown and cheese is melted.
