Ingredients

8 ounces mascarpone cheese, chilled (226g)

½ cup Biscoff cookie butter (140g)

2 tablespoons granulated sugar (or more based on your preference)

½ teaspoon vanilla (optional)

Pinch of salt (optional)

2 cups heavy whipping cream, chilled (480g)

1 ½ cup strong coffee or espresso

Instructions

  1. Biscoff Mascarpone Cream: In a clean bowl, combine mascarpone cheese, Biscoff cookie butter, sugar, salt, and vanilla. Whisk for 30-60 seconds until a creamy mixture forms, being careful not to overmix.
  2. Add cold heavy cream to the mixture and whisk on medium speed for 1-2 minutes until it reaches stiff peaks. The mixture should be pipeable and hold its shape. Use a spatula to scrape the sides and bottom to ensure the mixture is homogeneous.
  3. Assembly: Dip Biscoff cookies into the coffee for 1-2 seconds and create a layer of cookies in the bottom of your serving dish or cups. Optionally, break some cookies to fill any gaps.
  4. Spread half of the Biscoff mascarpone cream mixture evenly over the cookies.
  5. Repeat the process with another 2 layers of soaked Biscoff cookies and the remaining mascarpone cream mixture. If desired, save a little cream mixture for piping on top.
  6. Refrigerate for at least 4 hours or overnight to fully set.
  7. Once ready to serve, decorate with crushed Biscoff cookies and drizzle warmed-up cookie butter over the top.
