Ingredients

200 g mascarpone (room temperature)

16 g whipping cream stabilizer

8 g vanilla sugar (or 1 tsp vanilla extract)

40 g granulated sugar

300 ml cold heavy cream

Ladyfingers (cut to fit)

Biscoff cookies (crumbled)

Biscoff spread

Strawberries (halved, for garnish)

Instructions

  1. In a large bowl, mix mascarpone, whipping cream stabilizer, vanilla sugar, and granulated sugar for 1 minute.
  2. Gradually add heavy cream while mixing until stiff peaks form.
  3. Cut ladyfingers into thirds, then again into smaller pieces for the base.
  4. Line a baking ring with plastic wrap and place it on a plate. Line the ring with ladyfingers and fill the base with smaller pieces.
  5. Pipe a layer of cream onto the base, add a layer of Biscoff spread, a sprinkle of Biscoff cookie crumbs, and another layer of cream. Smooth the top.
  6. Refrigerate for at least 4-5 hours, preferably overnight.
  7. Heat Biscoff spread until pourable and drizzle over the top.
  8. Garnish with strawberries, Biscoff lines, and cookie crumbs. Serve chilled.

Notes

  • Use room-temperature mascarpone and cold cream for best texture.
  • Chill overnight for enhanced flavor and structure.
  • Dip ladyfingers in milk or coffee for a softer base.
  • Optional: add chopped strawberries or salted caramel for extra flavor layers.
