Ingredients

2 cups fresh broccoli florets

1 cup shredded cheddar cheese

4 oz cream cheese, softened

½ cup almond flour (or coconut flour if you prefer)

1 tsp garlic powder

1 tsp onion powder

2 large eggs

Salt and pepper to taste

Olive oil for frying or drizzling

Optional: Grated Parmesan cheese for extra flavor

Instructions

  1. Preheat your oven to 400°F (200°C) if baking, or heat oil in a pan over medium heat if frying.
  2. Wash and finely chop the broccoli florets.
  3. Steam the broccoli for about 5 minutes, then drain and let it cool slightly.
  4. In a bowl, combine the steamed broccoli, cheddar cheese, cream cheese, garlic powder, onion powder, salt, and pepper.
  5. Add the almond flour to the mixture and mix until the ingredients hold together.
  6. Stir in the eggs until the mixture is fully combined.
  7. Shape the mixture into small round patties, about 1–2 inches wide.
  8. If baking, place the patties on a lined baking sheet, drizzle with olive oil, and optionally sprinkle with Parmesan cheese. Bake for 20–25 minutes, flipping halfway through.
  9. If frying, heat oil in a pan over medium heat. Fry the patties for 2–3 minutes on each side until golden and crispy.
  10. If frying, place the patties on paper towels to drain excess oil.
  11. Serve the broccoli cheese rounds warm and crispy, with your favorite dipping sauce.
