Ingredients

Flatbread

  • 1 large flatbread (such as Trader Joe’s)
  • 1 tablespoon olive oil

Toppings

  • 4 tablespoons apricot jam (approximate)
  • 8 oz round brie, cut into slices
  • 6 oz fresh berries (raspberries, blackberries, strawberries, or any one variety)

Garnishes

  • Balsamic glaze, for drizzling
  • Fresh basil, minced
  • Hot honey, optional, for drizzling
  • Flaky salt or kosher salt, for sprinkling

Instructions

  1. Preheat Grill: Preheat your grill to medium or medium-low heat, setting it up for indirect grilling by preparing a flame-free area if possible. Alternatively, preheat your oven to 425°F if cooking indoors. Have a large cutting board and metal spatula nearby for handling the flatbread.
  2. Prepare and Crisp Flatbread Base: Lightly brush the flatbread’s surface with olive oil. Place it directly on the grill grates or in a grill-safe pan. Grill for 1-2 minutes, keeping a close eye to achieve a crispy but not burnt bottom.
  3. Add Toppings: Remove the flatbread to your work surface and lightly spread apricot jam over the top. Arrange brie slices evenly, then tuck berries both on top and partially under some slices for flavor meld. Return the flatbread to the grill, close the lid, and cook until the cheese melts and the bottom crisps further, about a few minutes.
  4. Finish and Garnish: Remove the flatbread from heat and drizzle with balsamic glaze and hot honey if desired. Sprinkle minced fresh basil and flaky salt evenly across the top for flavor and texture contrast.
  5. Serve: Slice the flatbread into portions and serve immediately while warm and melty.

Notes

  • Use indirect grilling technique to avoid burning the flatbread while melting cheese.
  • If grilling isn’t an option, bake the flatbread in a preheated 425°F oven on a baking sheet.
  • Adjust amount of berries according to your preference; mix varieties or use a single kind.
  • Hot honey adds a subtle spicy sweetness but is optional for a milder flavor.
  • Flaky salt provides a textural contrast and enhances flavor; kosher salt is a good alternative.
