Ingredients

3 pounds beef chuck roast, sliced into thin 1/4-inch strips

3/4 tsp salt

1/2 tsp freshly ground black pepper

3 tbsp olive oil

2 1/2 tsp garlic powder

2 tsp dried oregano

1 tsp ground cumin

1 tsp dried thyme

2 tbsp fresh lemon juice

5 soft pitas

5 lettuce leaves

1 cup cherry tomatoes, halved

1/4 red onion, thinly sliced

1 English cucumber, sliced and halved

1 cup plain Greek yogurt

1 clove garlic, finely minced

1 tbsp fresh lemon juice

1 tbsp olive oil

1 tsp red wine vinegar

1 tsp dried dill weed

Salt and freshly ground black pepper, to taste

Instructions

  1. For Tzatziki Sauce: Combine all the tzatziki sauce ingredients in a bowl and stir well. Refrigerate until ready to serve.
  2. Slow Cooker Method: Trim any large pieces of fat from the beef roast and slice it into thin, 1/4-inch strips. Place it in the slow cooker. In a small bowl, combine olive oil, garlic powder, oregano, cumin, thyme, lemon juice, salt, and pepper. Pour the mixture over the beef. Cover and cook on LOW for 6 hours or until the beef is tender.
  3. Instant Pot Method: Trim the beef roast and slice it into thin, 1/4-inch strips. Place the beef in the Instant Pot. In a small bowl, combine ⅓ cup water, olive oil, garlic powder, oregano, cumin, thyme, lemon juice, salt, and pepper. Pour the mixture over the beef. Cover and cook on high pressure for 30 minutes. Allow the pressure to release naturally for 15 minutes before opening the lid.
  4. Serve: Warm the pitas and layer them with a lettuce leaf. Top with the cooked beef, tomatoes, cucumber, onion, and tzatziki sauce.

Notes

  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet or microwave.
  • For a spicier version, add hot sauce, red pepper flakes, or fresh chilies to the beef or tzatziki sauce.
  • Vegetarian option: Replace beef with grilled vegetables or marinated tofu.
  • If using a slow cooker, cook on LOW for 6 hours, or HIGH for 3 hours.
  • For a richer sauce, add a tablespoon of olive oil or extra garlic to the tzatziki.
