Ingredients

1/3 cup olive oil

Salt & pepper, to taste

8 large prawns (shells on, vein removed)

2 cloves garlic, grated

12 chillies, sliced

1 tbsp fresh parsley (about 2 g), chopped

1 lemon – juice and zest

Optional: Fresh lemon wedges and crusty bread for serving

Instructions

  1. Prepare the BBQ: Light firelighters, top with charcoal, and allow coals to become white-hot.
  2. Make the sauce: Heat olive oil in a pan over medium heat. Add garlic and chillies, frying for 2 minutes. Stir in lemon zest and juice, cooking gently until garlic loses its raw edge.
  3. Marinate the prawns: Pour half the sauce over the cleaned prawns, working it under the shells for even flavor.
  4. Grill: Place prawns directly over the heat. Cook for 45–60 seconds per side, until pink and lightly charred. Reduce flames if needed.
  5. Serve: Transfer to a tray, drizzle with remaining sauce, and garnish with parsley. Serve with lemon wedges and bread.

  • Swap prawns for shrimp or langoustines for variation.
  • Add smoked paprika for extra depth.
  • Coriander can be used instead of parsley for a fresh twist.
  • Try lime juice instead of lemon for tangy brightness.
