Ingredients

For the Spiced Chickpeas

  • 3 teaspoons olive oil
  • 1 (15 oz) can chickpeas, drained and rinsed
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon sugar
  • 1/2 teaspoon salt

For the Pizza

  • 1 large pizza crust or 4 personal sized crusts
  • 3/4 cup BBQ sauce (store-bought or homemade)
  • 1 cup vegan shredded cheese
  • 1/3 cup thinly sliced red onion
  • Fresh cilantro for garnish, optional

Instructions

  1. Prepare the chickpeas: Heat the oven to 425°F (220°C). Warm a large pan over medium heat and add the olive oil followed by the drained and rinsed chickpeas. Cook, stirring occasionally, until the chickpeas begin to brown slightly, about 5 minutes. Sprinkle in the chili powder, paprika, cumin, garlic powder, onion powder, sugar, and salt. Stir well and continue cooking for another 3-4 minutes to let the flavors meld and the chickpeas become aromatic.
  2. Assemble the pizza: Choose to use either one large pizza crust or several personal-sized crusts, with a store-bought crust recommended for convenience. Spread the BBQ sauce evenly over the crust(s). Sprinkle the vegan shredded cheese on top, then layer the spiced chickpeas and thinly sliced red onion evenly over the cheese.
  3. Bake the pizza: Place the assembled pizza(s) in the preheated oven and bake for 10-15 minutes or until the cheese has melted completely and the pizza is heated through. The crust should be crisp and the toppings bubbly.
  4. Garnish and serve: Remove the pizza from the oven and let it cool for a few minutes. Garnish with fresh cilantro if desired, then slice and serve warm for the best flavor and texture.

Notes

  • Store-bought pizza crust works best for quick preparation, but homemade crust can be used for a more personalized touch.
  • Adjust the amount of chili powder and paprika to make the chickpeas spicier or milder according to taste.
  • For a gluten-free option, substitute the crust with a certified gluten-free pizza base.
  • Fresh cilantro adds a bright finish but can be omitted if unavailable or not preferred.
  • Leftover pizza can be stored in the refrigerator for up to 3 days and reheated in the oven for best texture.
