Ingredients

1/2 cup all-purpose flour

2 teaspoons baking powder

1 teaspoon cinnamon

1/2 teaspoon salt

1/2 cup brown sugar

1 large egg

1/2 cup mashed overripe bananas

1 teaspoon vanilla extract

1/4 cup neutral oil

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a mini muffin tin or donut bite mold.
  2. In a medium bowl, whisk together flour, baking powder, cinnamon, and salt.
  3. In another bowl, whisk brown sugar and egg until combined.
  4. Add mashed bananas, vanilla extract, and oil. Stir until smooth.
  5. Mix dry ingredients into the wet mixture until just combined.
  6. Transfer batter into a piping bag or plastic bag with the corner snipped off.
  7. Pipe batter into mini muffin tin or donut bite molds, filling each about 3/4 full.
  8. Bake for 8–10 minutes (or 2–3 minutes in a treat maker) until golden and springy to the touch.
  9. Cool slightly before serving. Enjoy warm.
