Ingredients

  • 2 cups strawberries, stems removed and sliced (250g)
  • 3 cups salad greens (arugula, spinach, lettuce, or a mix)
  • 1/2 cup walnuts, roughly chopped (60g)
  • 1/2 cup crumbled feta cheese (2 oz)

Instructions

  1. Cook the Pasta: Fill a large pot about two-thirds full with water, add 1 tablespoon of sea salt, and bring it to a boil. Carefully add the gluten-free fusilli and cook until al dente—firm yet tender—about 10 minutes. Stir frequently to prevent the pasta from clumping together.
  2. Prepare the Dressing and Strawberries: In a small bowl, whisk together 1/3 cup olive oil, 2 tablespoons balsamic vinegar, 2 tablespoons maple syrup (or honey), salt, and pepper. Add the sliced strawberries and toss them in the dressing, then refrigerate to let the flavors meld.
  3. Drain and Cool the Pasta: Once the pasta is cooked, drain it and rinse under cold water to stop the cooking process and cool it down, keeping the texture firm.
  4. Combine the Salad: In a large mixing bowl, combine the cooled pasta, the dressed strawberries, salad greens, chopped walnuts, and crumbled feta.
