Ingredients

2 cups Greek yogurt

4 large eggs

1/4 cup maple syrup or honey

1 teaspoon vanilla extract

3 tablespoons cornstarch

1 1/2 cups berries, divided

Instructions

  1. Preheat the oven to 350°F and line an 8×8 square baking dish with parchment paper. Set aside.
  2. In a large bowl, combine the Greek yogurt, eggs, maple syrup, and vanilla extract. Whisk until smooth.
  3. Add the cornstarch and whisk again until well combined.
  4. Stir in 1 cup of berries gently.
  5. Pour the mixture into the prepared baking dish and sprinkle the remaining 1/2 cup of berries on top.
  6. Bake for 45 minutes or until the yogurt is set and the center is no longer jiggly.
  7. Remove from the oven and let it cool almost completely.
  8. Once cooled, cut into 9 slices and enjoy as is or with a drizzle of additional maple syrup.

Notes

  • Store in an airtight container in the fridge for up to 5 days.
  • Can be frozen in an airtight container for up to 3 months. Thaw in the fridge overnight.
  • You can use regular yogurt, but Greek yogurt gives a thicker, creamier texture.
  • Other sweeteners like honey can be substituted for maple syrup.
  • Feel free to use any berries you prefer such as strawberries, raspberries, or blueberries.
  • Adjust the baking time if using a larger baking dish.
  • Adding spices like cinnamon or nutmeg can enhance the flavor.
  • Baked yogurt can be served on its own or with additional toppings like granola or extra berries.
