Ingredients

Main Ingredients

  • 2 cups Greek yogurt
  • 4 large eggs
  • 1/4 cup maple syrup (or honey)
  • 1 teaspoon vanilla extract
  • 3 tablespoons cornstarch
  • 1 1/2 cups berries (divided)

Instructions

  1. Preheat and Prepare: Preheat your oven to 350°F (175°C). Line an 8×8 square baking dish with parchment paper to prevent sticking and for easier removal after baking. Set aside this prepared dish.
  2. Mix Ingredients: In a large mixing bowl, combine the Greek yogurt, eggs, maple syrup, and vanilla extract. Whisk thoroughly until the mixture is smooth and uniform. Then, add the cornstarch and whisk again until fully incorporated to help thicken the mixture during baking.
  3. Add Berries: Gently fold in 1 cup of the berries to the yogurt mixture, stirring carefully to distribute them without breaking the fruit. Pour this mixture into your prepared baking dish. Sprinkle the remaining 1/2 cup of berries evenly over the top for added color and flavor.
  4. Bake: Place the baking dish into the preheated oven and bake for approximately 45 minutes, or until the center of the yogurt custard is set and no longer jiggly when gently shaken. This ensures the custard has the perfect creamy texture.
  5. Cool and Serve: Remove the baked yogurt from the oven and allow it to cool almost completely in the dish. Once cooled, cut into 9 equal slices. Enjoy as is, or drizzle with additional maple syrup for extra sweetness and flavor.

Notes

  • Use full-fat Greek yogurt for a creamier texture and richer flavor.
  • Maple syrup can be substituted with honey if preferred or for a different flavor profile.
  • Feel free to use a mix of fresh or frozen berries, just ensure they are thawed and drained if frozen.
  • This dessert can be refrigerated for up to 3 days and served chilled or gently warmed.
  • For a thicker custard, you can increase the cornstarch by 1 tablespoon.
