Ingredients

For the Steelhead Trout

  • lbs steelhead trout fillet
  • 1 onion
  • 2 tbs olive oil
  • 2 lemons
  • Salt and pepper to taste
  • ½ tbs Italian herb seasoning
  • 1 tsp dried garlic granules

For the Garlic Lime Butter Sauce

  • 4 tbs butter
  • 6 garlic cloves
  • 1 lime
  • Pinch of salt

Instructions

  1. Preheat the Oven: Heat your oven to 425 ℉ (218 ℃) to prepare for baking the trout.
  2. Prepare Onions: Peel and slice the onion. Drizzle olive oil over the onion slices and spread them evenly in a baking dish to create a flavorful bed for the fish.
  3. Season the Trout: Place the steelhead trout fillet on top of the onions in the baking dish. Squeeze half a lemon over the fish, then season with salt, pepper, Italian herb seasoning, and dried garlic granules for a robust flavor.
  4. Add Lemon Slices: Thinly slice the remaining lemons and arrange the slices evenly over the top of the trout to infuse citrus aroma during baking.
  5. Bake the Fish: Place the baking dish in the oven and bake for about 25 minutes or until the fish is cooked through. Cooking time may vary depending on thickness. Optionally, roast additional vegetables in a separate pan alongside the fish.
  6. Prepare Garlic Lime Butter Sauce: While the fish bakes, mash the garlic cloves with a pinch of salt using a mortar and pestle or finely mince them. In a small pan, melt the butter over medium-high heat, then add the mashed garlic and cook until it just begins to turn golden, releasing its aroma.
  7. Finish the Sauce: Squeeze the juice of one whole lime into the garlic butter and stir well. Remove the sauce from heat to preserve its bright flavors.
  8. Serve: Once the trout is baked, spoon the warm garlic lime butter sauce generously over the fish before serving for an extra burst of flavor.

Notes

  • Ensure the fish is cooked through by checking that it flakes easily with a fork.
  • You can adjust the amount of garlic in the sauce to suit your taste preference.
  • Roasting vegetables like asparagus or zucchini makes a great side dish that complements the trout.
  • If fresh lemons aren’t available, high-quality bottled lemon juice can be used in a pinch.
  • The garlic butter sauce can be prepared ahead and gently reheated just before serving.
