Ingredients

4 boneless, skinless chicken breasts

1 tablespoon olive oil

1 clove garlic, minced

1/2 cup chicken broth

8 ounces cream cheese, softened

1 tablespoon fresh chives, chopped

1 teaspoon paprika

Salt and pepper, to taste

1/2 cup shredded sharp cheddar cheese (optional, for topping)

Fresh parsley (optional, for garnish)

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Season chicken breasts on both sides with salt, pepper, and paprika.
  3. Heat olive oil in a skillet over medium heat. Sear chicken for 2–3 minutes per side until golden brown. Remove and set aside.
  4. In the same skillet, sauté garlic for 30 seconds until fragrant.
  5. Add chicken broth and simmer for 1–2 minutes to slightly reduce.
  6. Stir in softened cream cheese until smooth, then mix in chives. Season with salt and pepper.
  7. Place chicken in baking dish and pour cream cheese sauce over the top.
  8. If desired, sprinkle with cheddar cheese.
  9. Bake for 25–30 minutes, until chicken reaches 165°F (74°C).
  10. If using cheddar, broil for the last 2–3 minutes to brown the topping.
  11. Garnish with fresh parsley before serving.

Notes

  • Use chicken thighs for a richer flavor.
  • Add spinach to the sauce for extra greens.
  • Swap cheddar for mozzarella or Monterey Jack for a milder taste.
  • Mix in cooked bacon for a smoky twist.
  • Add lemon juice to brighten the sauce.
  • Store leftovers in the fridge for up to 3 days; reheat gently.
