Ingredients

1.5 lbs salmon fillet

1 tsp cooking oil

1.5 tsp Cajun or blackened seasoning

23 avocados, cubed

2 tbsp lime juice (plus one lime wedge)

1 tsp fresh orange juice

¼ cup red onion, diced

¼ cup fresh cilantro, chopped

½ tsp Season-All seasoning

Salt and black pepper, to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat oil in a skillet over high heat. Place salmon skin-side down and sear for 5–7 minutes, until the edges are nearly cooked through.
  3. Squeeze the lime wedge over the salmon and allow the juice to cook down until the smoke settles.
  4. Transfer salmon to the oven and bake for 5–7 minutes, or until cooked to desired doneness.
  5. Meanwhile, prepare the salsa: In a bowl, combine cubed avocado, diced red onion, chopped cilantro, lime juice, orange juice, Season-All, salt, and pepper. Mix gently and adjust seasoning to taste.
  6. Plate salmon skin-side down, top with avocado citrus salsa, and serve immediately.
