Ingredients

1 sheet puff pastry

All-purpose flour, for dusting

8 oz brie wheel

2 tbsp fig jam

2 tbsp chopped dried apricots

1 tsp fresh thyme, plus extra for garnish

1 egg, beaten with 1 tsp water (egg wash)

Coarse salt, to taste

Honey, for drizzling

Crackers, for serving

Sliced apples or pears, for serving

Extra fig jam, for serving

Instructions

  1. Preheat oven to 400°F (200°C) and prepare a parchment-lined baking sheet or glass pie plate.
  2. Lightly flour a work surface and roll out the puff pastry to thin it slightly.
  3. Slice the top and bottom rinds off the brie wheel, leaving the sides intact.
  4. Place the brie in the center of the pastry and trim edges into a square, leaving a 2 ½-inch border.
  5. Spread fig jam over the brie, then top with chopped apricots and thyme.
  6. Fold the pastry up around the brie and seal the edges with a bit of water.
  7. Brush the pastry with egg wash and sprinkle lightly with coarse salt.
  8. Bake for 35 minutes, rotating halfway through, until puff pastry is golden and crisp.
  9. Transfer to a serving board, drizzle with honey, and garnish with extra thyme.
  10. Serve warm with crackers, sliced fruit, and extra fig jam.
