Instructions

  1. Preheat and Grease: Preheat your oven to 375°F (190°C) and place the oven rack in the middle position. Grease an 8×8 inch baking pan thoroughly with butter or non-stick spray to prevent sticking.
  2. Combine Ingredients: In a large mixing bowl, whisk together the rolled oats, ground cinnamon, ground ginger, ground nutmeg, baking powder, and salt. Add the milk, maple syrup, egg, and vanilla extract, whisking until the mixture is smooth and well combined.
  3. Add Blueberries and Pecans: Pour the oat mixture into the prepared baking pan, spreading it evenly. Scatter fresh or frozen blueberries over the top, then sprinkle chopped pecans if using, evenly across the surface.
