Ingredients

2 large apples, peeled, cored, and finely diced

1 ½ cups all-purpose flour

¼ cup granulated sugar

¼ cup brown sugar

2 teaspoons baking powder

1 ½ teaspoons ground cinnamon

½ teaspoon salt

⅔ cup milk

2 eggs, lightly beaten

2 tablespoons unsalted butter, melted

1 teaspoon vanilla extract

Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a baking sheet or line it with parchment paper.
  2. In a large mixing bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, cinnamon, and salt until evenly combined.
  3. In a separate bowl, whisk together the milk, eggs, melted butter, and vanilla extract until fully combined.
  4. Gently fold the wet ingredients into the dry ingredients until just combined. Don’t worry if the batter is a little lumpy.
  5. Fold in the finely diced apples, making sure they’re evenly distributed throughout the batter.
  6. Drop the batter onto the prepared baking sheet in ¼ cup portions, spacing them apart.
  7. Bake for 15-20 minutes or until golden brown.
  8. Allow the fritters to cool on the pan for 5 minutes, then transfer them to a wire rack. Dust with powdered sugar before serving, if desired.

Notes

  • For extra warmth, add a pinch of nutmeg or allspice to the batter to complement the cinnamon.
  • Drizzle with a simple glaze made from powdered sugar and milk for an extra sweet touch.
  • Feel free to use different apple varieties, such as Granny Smith for tartness or Fuji for sweetness.
  • Store leftovers in an airtight container at room temperature for up to 2-3 days.
  • Reheat in the oven for best results, or microwave for 20-30 seconds if in a hurry.
