Onion Jam

  • 2 extra large onions, quartered and thickly sliced
  • ½ cup brown sugar (coconut sugar as paleo substitute)

  • ⅓ cup strong brewed coffee
  • 1 tablespoon balsamic vinegar

Instructions

  1. Fry bacon: Cut the bacon into half-inch slices and place them in a large frying pan. Cook over medium-high heat for about 10 minutes, stirring frequently, until the bacon is cooked but still slightly chewy with some crispy bits. Use a slotted spoon to remove the bacon from the pan, leaving the drippings behind.
  2. Caramelize onions: Pour out all but 1 tablespoon of the bacon drippings. Add the quartered and thickly sliced onions to the pan. Cook for 8-10 minutes over medium heat, then reduce heat to low. Stir in the brown sugar and continue cooking until the onions become deeply caramelized, about 20 minutes, stirring occasionally.
  3. Simmer the jam: Add the reserved bacon back into the pan along with the strong brewed coffee and water. Increase the heat to medium and cook, stirring about every five minutes, until the mixture becomes thick and jam-like. This should take about 30 minutes. Remove from heat and stir in the balsamic vinegar. Adjust seasoning and add salt if needed.
