Ingredients

Fruit and Vegetables

  • 3 to 4 clementine oranges
  • 2 medium ripe avocados (about 1-1/3 cups diced)
  • 1/4 cup diced red onion
  • 1-1/2 tablespoons finely diced jalapeño (ribs and seeds removed to control heat; include seeds for more heat)
  • 1/4 cup finely chopped cilantro (measured after chopping, about 1/2 large bunch)
  • 3 tablespoons lime juice

Oils and Seasonings

  • 1-1/2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper

Optional

  • Tortilla chips (for serving, optional)

Instructions

  1. Dice the fruits and vegetables. Peel, segment, and dice the clementines. Peel and pit the avocados, then dice them. Dice the red onion, jalapeño, and finely chop the cilantro. Aim for small, uniform pieces to ensure even distribution in the salsa.
  2. Combine ingredients. In a large bowl, add the diced clementines, avocados, red onion, jalapeño, and cilantro. Pour in the olive oil and lime juice, then sprinkle the salt and pepper over the mixture.
  3. Mix gently. Using a spoon, gently toss all the ingredients together until they are evenly combined, taking care not to mash the avocado.
  4. Adjust seasoning. Taste the salsa and adjust the flavors as desired. Add extra lime juice for more tang or a pinch more salt to enhance the flavor.
  5. Rest the salsa. Let the salsa sit for 10 to 15 minutes to allow the flavors to meld and develop fully.
  6. Serve. Give the salsa a gentle toss just before serving. Serve as is or with tortilla chips for dipping.

Notes

  • The heat level can be controlled by adjusting the amount of jalapeño and whether you include the seeds.
  • Resting the salsa enhances the mingling of flavors but can be served immediately if short on time.
  • Use ripe avocados to ensure a creamy texture without bitterness.
  • This salsa is best eaten fresh but can be stored covered in the refrigerator for up to 24 hours; expect slight browning of avocado.
