Ingredients

1 medium Avocado, ripe but not bruised

4 small but fairly thick slices of Bread (e.g., White Bloomer or Sourdough)

23 square slices of Monterey Jack

23 square slices of Cheddar

2 large pinches of Flaky Sea Salt, to taste

2 large pinches of Cracked Black Pepper, to taste

2 large pinches of Chipotle Flakes (optional, or use regular chili flakes)

2 poached or fried Eggs, to serve (optional)

Instructions

  1. Carefully halve the avocado using a sharp knife. Remove the stone by hitting it with the knife blade and twisting it out. Peel both halves, slice the avocado into thin strips, and set aside.
  2. Butter one side of each slice of bread. Place two slices butter-side-down in a pan with the heat OFF. Layer the Monterey Jack cheese on top, followed by the avocado slices. Season the avocado with a pinch of flaky sea salt, cracked black pepper, and chipotle flakes. Add the cheddar cheese on top.
  3. Place the other slices of bread on top, butter-side-up. Turn the heat to medium and fry both sides until the bread is crisp, golden, and the cheese has melted.
  4. If desired, top the grilled cheese with a poached or fried egg for an extra indulgent meal.

Notes

  • For a savory, smoky crunch, add crispy bacon.
  • For freshness, add sliced tomato along with the avocado.
  • Experiment with different cheeses like gouda or mozzarella for unique twists.
  • Sourdough or seeded bread adds extra flavor and texture to the sandwich.
