Ingredients

1 bagel, sliced in half

1 teaspoon cooking oil

1 large egg

1 small avocado, peeled and pitted

Salt and black pepper, to taste

2 tablespoons cream cheese, softened

Instructions

  1. Toast the bagel halves until golden brown.
  2. Heat oil in a frying pan over medium heat. Crack in the egg and cook until set, about 3–4 minutes.
  3. In a small bowl, mash the avocado with a fork. Season with salt and pepper.
  4. Spread cream cheese over each toasted bagel half.
  5. Top with mashed avocado, then add the fried egg.
  6. Season with additional salt and pepper if desired. Serve immediately.
