Ingredients

Skewers

  • 8 large green olives
  • 8 Genoa salami slices, halved
  • 8 mini Mozzarella cheese balls
  • 8 large basil leaves
  • 8 grape tomatoes
  • 8 cheese tortellini, cooked and cooled
  • 8 large black olives

Herb Vinaigrette

  • 1/4 cup good vinegar (Champagne, sherry, or balsamic)
  • 2/3 teaspoon salt
  • 1/2 teaspoon Dijon mustard
  • 1/2 clove garlic, finely minced or 2 teaspoons minced shallots
  • 2 teaspoons honey
  • 3/4 cup extra-virgin olive oil
  • 1/4 teaspoon fresh ground pepper
  • 1/2 teaspoon fresh chives, chopped
  • 1/2 teaspoon fresh basil, chopped
  • 1/2 teaspoon fresh parsley, chopped

Instructions

  1. Prepare the Skewers: Using 8 wooden skewers (approximately 7 inches long), thread one piece each of green olive, halved Genoa salami slice, mini mozzarella ball, large basil leaf, grape tomato, cooked and cooled cheese tortellini, and a large black olive onto each skewer. Set the assembled skewers aside while you prepare the dressing.
  2. Make the Herb Vinaigrette: In a small jar with a tight-fitting lid, combine the Dijon mustard, minced garlic (or shallots), honey, extra-virgin olive oil, vinegar, salt, fresh ground pepper, chopped chives, fresh basil, and fresh parsley. Seal the jar and shake vigorously until all ingredients are thoroughly mixed and emulsified into a smooth vinaigrette.
  3. Serve the Skewers: When ready to serve, pour the herb vinaigrette over the prepared skewers, or serve it on the side for dipping. The vinaigrette enhances the flavors of the fresh ingredients, adding a bright and savory touch to each bite.
