Ingredients

Base

  • 1 ½ cups unsweetened shredded coconut
  • ¼ cup coconut oil (melted)
  • ¼ cup honey

Topping

  • 18 raw almonds
  • 4 ounces baking chocolate (melted)

Instructions

  1. Prepare Pan: Line a loaf pan with parchment paper to prevent sticking and set it aside for easy removal of the bars later.
  2. Mix Base Ingredients: In a large bowl, combine the shredded coconut, melted coconut oil, and honey. Mix thoroughly until the mixture becomes sticky and well combined, ensuring even texture and sweetness.
  3. Press Mixture: Transfer the sticky coconut mixture into the prepared pan and press it down firmly to create an even layer. Place the raw almonds evenly spaced in 3 rows of 6 on top, then press lightly to secure them into the base.
  4. Chill: Place the pan in the refrigerator and chill until the mixture is completely firm, which takes at least 2 hours or preferably overnight for best results.
  5. Slice Bars: Once firm, lift the entire slab out of the pan using the parchment paper. Using a very sharp knife, carefully cut into 18 equal squares to form individual bars.
  6. Coat with Chocolate: Using a fork, dip each bar into the melted baking chocolate, allowing any excess chocolate to drip off before placing the coated bars back onto the parchment paper in a single layer.
  7. Set Chocolate: Refrigerate the dipped bars again for about 30 minutes until the chocolate coating is fully set and hardened.
  8. Store and Serve: Keep the almond joy bars refrigerated until ready to serve to maintain their shape and freshness.

Notes

  • Ensure the coconut oil is fully melted before mixing to combine ingredients evenly.
  • Use a sharp knife for clean, even cuts to avoid crumbling the bars.
  • If you prefer, substitute honey with maple syrup for a vegan option, but note that it may slightly alter the texture.
  • Chocolate can be tempered or simply melted; tempered chocolate provides a shinier finish and better snap.
  • Store bars in an airtight container in the refrigerator for up to one week.
  • Allow bars to sit at room temperature for a few minutes before eating for a softer bite if desired.
