Ingredients

1 ½ pounds chicken wings (drumettes and flats)

3 ½ tablespoons salted butter

2 tablespoons garlic, finely minced

½ teaspoon flat-leaf parsley, finely minced

¼ cup parmesan cheese, freshly grated

Kosher salt (Diamond Crystal recommended)

Freshly cracked black pepper

Garlic powder

Avocado oil spray (for air fryer basket)

Instructions

  1. Preheat air fryer to 360°F for 5 minutes.
  2. Pat wings dry with paper towels. Season generously with kosher salt, pepper, and garlic powder.
  3. Spray air fryer basket with avocado oil. Arrange wings in a single layer.
  4. Cook at 360°F for 25 minutes, flipping at the 13-minute mark.
  5. Increase heat to 400°F. Flip wings and cook for 3 minutes, then flip again and cook 2 more minutes until extra crispy.
  6. Meanwhile, melt butter in a saucepan over low heat. Add garlic and cook gently for 2 minutes, without browning.
  7. Toss wings in garlic butter. Add parsley and toss again.
  8. Sprinkle parmesan over wings, toss, and serve immediately.

Notes

  • Add red pepper flakes for heat.
  • Swap parsley with basil or oregano.
  • Use pecorino Romano instead of parmesan for sharper flavor.
  • Finish with lemon juice for brightness.
  • For a fusion twist, toss with buffalo or BBQ sauce before adding parmesan.
