Ingredients

Shrimp Marinade

  • 1 pound jumbo shrimp (peeled and deveined)
  • 1 tablespoon olive oil
  • 1 tablespoon Old Bay seasoning
  • 1 tablespoon lemon juice
  • 3 to 4 cloves garlic (minced)
  • 3 tablespoons chopped fresh herbs of choice (or 1 tablespoon dried Italian seasoning)

Salad

  • 2 to 3 bags chopped Caesar salad kits (produce section of grocery store), including the dressing and toppings packets

Instructions

  1. Prepare the shrimp marinade: Pat the shrimp dry using paper towels and place them in a mixing bowl. Add the olive oil, Old Bay seasoning, lemon juice, minced garlic, and either the fresh herbs or dried Italian seasoning. Toss thoroughly to evenly coat all the shrimp.
  2. Cook the shrimp in the air fryer: Arrange the marinated shrimp in a single layer inside the air fryer basket. Set the air fryer temperature to 390°F and cook for 8 to 10 minutes, adjusting the time based on the size of the shrimp until they are pink and cooked through.
  3. Assemble the Caesar salad: While the shrimp cooks, prepare the Caesar salad kits according to the package instructions, including tossing the salad with the provided dressing and adding the toppings.
  4. Combine and serve: Once the shrimp have slightly cooled, divide the prepared salads evenly among four bowls or plates. Top each salad with the air-fried lemon herb shrimp and serve immediately.

Notes

  • Do not overcrowd the air fryer basket to ensure even cooking; cook shrimp in batches if necessary.
  • Use fresh herbs like parsley, basil, or cilantro to enhance flavor, or substitute with dried Italian seasoning if fresh herbs are unavailable.
  • For extra zest, add a squeeze of fresh lemon juice on top of the finished salads before serving.
  • This salad is best enjoyed immediately for optimal crispness of the lettuce and freshness of shrimp.
