Ingredients

Pickle Preparation

  • 16 ounces dill pickle chips

Breading Mixture

  • 1 egg
  • 2 tablespoons milk (almond milk used)
  • 2/3 cup Panko breadcrumbs
  • 1/3 cup flour
  • 1/8 cup grated parmesan cheese
  • 1/4 teaspoon dried dill
  • 1/2 teaspoon garlic powder
  • 1/8 teaspoon ground black pepper
  • Dash of chipotle powder

Instructions

  1. Drain the pickles: Place a sieve in the sink and dump the pickle chips in it. Let them drain for 5 minutes to remove excess liquid.
  2. Blot the pickles: Lay paper towels in a jelly roll pan, then place each pickle chip onto the paper towels. Cover them with a few more sheets of paper towels and gently blot to absorb moisture.
  3. Let pickles dry: Allow the pickles to sit for 15 minutes, then change out the paper towels, lay the pickles on fresh ones, cover again, blot, and let sit for another 15 minutes to ensure they are nicely dried.
  4. Prepare egg wash: Crack the egg into a shallow bowl, add the milk, and whisk together until fully combined.
  5. Mix breading: In another shallow bowl, combine the Panko breadcrumbs, flour, grated parmesan, dried dill, garlic powder, black pepper, and chipotle powder. Mix thoroughly with a fork.
  6. Coat the pickles – egg wash: Transfer the dried pickles to the egg mixture, flipping them to ensure both sides are well coated. Allow excess egg to drip off.
  7. Coat the pickles – breading: Dip each egg-coated pickle into the breading mixture, coating both sides evenly. Place coated pickles in a single layer in the air fryer basket, making sure they are not touching.
  8. Start air frying: Set the air fryer temperature to 375°F and timer to 12 minutes. Once preheated, lightly spray the tops of the pickles with olive oil spray and place the basket inside.
  9. Flip halfway: After 6 minutes, carefully remove the basket, flip each pickle chip, spray again with olive oil, and return to the air fryer to finish cooking.
  10. Finish cooking and remove: When the timer beeps at 12 minutes total, remove the pickles from the air fryer. They should be crispy and golden brown.
  11. Repeat batches: Continue the process for any remaining pickle chips until all are cooked.
