Ingredients

Chicken

  • 2 chicken breasts (boneless and skinless, cut into strips, around 1 pound / 450g)
  • 1 tablespoon vegetable oil
  • 3 tablespoons fajita seasoning

Vegetables

  • 1 red bell pepper (sliced into ½ inch slices)
  • 1 yellow bell pepper (sliced into ½ inch slices)
  • 1 green bell pepper (sliced into ½ inch slices)
  • 1 red onion (sliced into wedges)

  • Pico de gallo

Instructions

  1. Preheat the Air Fryer: Set your air fryer to 390°F (200°C) and allow it to preheat to ensure the chicken and vegetables cook evenly and get a nice sear.
  2. Season the Chicken and Vegetables: Drizzle the vegetable oil over the chicken strips, then toss them in the fajita seasoning until evenly coated. Add the sliced bell peppers and red onion, seasoning them with fajita seasoning as well and mixing thoroughly to coat all pieces.
  3. Air Fry the Mixture: Place the seasoned chicken and vegetables into the air fryer basket, spreading them out in a single layer if possible. Cook for 15 minutes, shaking or tossing the contents halfway through to promote even cooking and browning.
  4. Serve: Once cooked through and slightly charred, transfer the chicken and vegetables to a serving dish. Serve immediately with warmed tortillas, and add toppings like pico de gallo or avocado slices for a delicious meal.

Notes

  • If you don’t have fajita seasoning, you can make your own blend with chili powder, paprika, cumin, garlic powder, onion powder, oregano, salt, and pepper.
