Ingredients

Filling

  • 2 cups shredded cooked rotisserie chicken
  • 4 ounces whipped cream cheese, softened
  • 1 (4 oz) can diced green chiles, drained
  • 1 (1 oz) package reduced sodium taco seasoning
  • 1 cup shredded Cheddar cheese

Assembly

  • 4 (8 or 10 inch) flour tortillas
  • Cooking spray

Topping

  • 1 (10 oz) can Red or Green Enchilada Sauce
  • Additional shredded cheese
  • Greek yogurt
  • Fresh cilantro, for garnish
  • Chopped scallions, for garnish

Instructions

  1. Preheat the Air Fryer: Preheat your air fryer to 350°F (175°C) ensuring it’s ready to cook the chimichangas evenly with a crispy finish.
  2. Prepare the Filling: In a bowl, combine shredded rotisserie chicken, whipped cream cheese, diced green chiles, reduced sodium taco seasoning, and shredded cheddar cheese, mixing thoroughly to create a flavorful filling.
  3. Assemble the Chimichangas: Place about 1/2 cup of the chicken mixture in the center of each flour tortilla. Fold the sides inward, then fold down the middle and roll tightly to enclose the filling securely.
  4. Air Fry the Chimichangas: Arrange the rolled chimichangas in the air fryer basket, spray them lightly with cooking spray to encourage browning, and air fry for 10 minutes at 350°F until golden and crispy.
  5. Add Sauce and Cheese: Once cooked, spoon enchilada sauce generously over the chimichangas and sprinkle with extra shredded cheese. Transfer them to the microwave and heat until the cheese melts and the sauce is warm.
  6. Serve With Toppings: Garnish with your choice of Greek yogurt, fresh cilantro, scallions, or other preferred toppings and enjoy your healthy, crunchy chimichangas.
