Ingredients

Produce

  • 4 cucumbers (washed very well & cut in small chunks, ends discarded)
  • Juice of one large lime or more according to taste (optional)

Liquids

  • 4 cups water (divided)

Sweeteners

  • ½ to ¾ cup sugar (adjust to taste)
  • ⅓ cup Truvia or your favorite non-calorie sweetener

Instructions

  1. Blend Cucumbers: Add 1 cucumber chunk and 1 cup of water to a blender and blend until smooth to create the cucumber base.
  2. Strain Mixture: Pour the blended mixture through a strainer into a bowl to remove solids, then transfer the strained liquid into a pitcher, discarding the pulp.
  3. Repeat Blending: Repeat the blending and straining process with the remaining cucumbers and water.
  4. Add Sweeteners and Lime: Stir in the sugar and Truvia (or preferred sweetener) until dissolved. Add lime juice if desired, then adjust sweetness or lime to taste.
  5. Chill: Cover the pitcher and refrigerate the agua fresca for at least one hour to let flavors meld and serve well chilled.
  6. Serve: Pour over ice cubes and enjoy a refreshing cucumber agua fresca.

Notes

  • Adjust the amount of sugar or sweetener according to your sweetness preference.
  • Lime juice is optional but adds a bright citrus note that complements the cucumber.
  • For a smoother texture, use a fine mesh strainer or cheesecloth when straining.
  • Store leftovers in the refrigerator and consume within 2 days for best freshness.
  • Try using sparkling water instead of still water for a fizzy variation.
