Ingredients

8 fresh passion fruit

¼ cup fresh mint leaves, plus extra for garnish

5 tablespoons granulated sugar

6 ounces light rum

6 tablespoons fresh lime juice

45 ice cubes, plus more for glasses

Club soda, to top

Instructions

  1. Cut open the passion fruit and press pulp through a fine mesh strainer to extract juice and pulp. Reserve seeds for garnish.
  2. In a cocktail shaker, muddle mint leaves with sugar until fragrant.
  3. Add rum, lime juice, and ice. Shake vigorously.
  4. Fill glasses with ice. Divide mojito mixture evenly among glasses.
  5. Top with club soda and stir in passion fruit juice and pulp.
  6. Garnish with mint leaves and reserved seeds. Serve immediately.

Notes

  • Fresh passion fruit gives the best flavor, but bottled juice works too.
  • For a sweeter drink, add more sugar or simple syrup.
  • To make a mocktail, omit rum and use sparkling water.
  • Best served fresh, as soda loses fizz if stored.
