Ingredients
1 red onion, roughly diced
1 red bell pepper, roughly diced
1/2 lb fresh broccoli, cut into small florets
1 yellow squash, cut into 1/2-inch slices
1 zucchini squash, cut into 1/2-inch slices
3 cloves garlic, minced
1 tbsp olive oil
1 tsp garlic powder
1/2 tsp salt
1/2 tsp black pepper
Instructions
- Preheat oven to 425˚F.
 - Place all chopped vegetables in a large bowl.
 - Add olive oil, minced garlic, garlic powder, salt, and black pepper. Toss until evenly coated.
 - Spread vegetables in a single layer on a large baking sheet.
 - Roast 15–20 minutes, or until tender and lightly browned.
 - Remove from oven and serve warm.
 
Notes
- Don’t overcrowd the pan—spread veggies in a single layer for the best caramelization.
 - Great served fresh, but also tasty cold in grain bowls or salads.
 - Add a drizzle of balsamic glaze or sprinkle with Parmesan after roasting for extra flavor.
