Ingredients

2 ripe bananas (about 200g)

1 cup rolled oats (old-fashioned or quick cooking)

1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking tray with parchment paper or a silicone baking mat.
  2. Peel and mash the bananas in a medium bowl using a fork or potato masher until only small lumps remain.
  3. Stir in the rolled oats and cinnamon. Let the mixture sit for a few minutes to allow the oats to absorb moisture. If the mixture is too wet, add 1-2 tablespoons more oats to thicken it up.
  4. Using a spoon, drop spoonfuls of the dough onto the prepared baking tray. Shape the cookies with your fingers as they won’t spread during baking. This recipe makes about 8 medium-sized cookies (3 inches wide).
  5. If desired, top with chocolate chips, chopped nuts, or a smear of fruit preserves.
