Peanut Sauce

  • 1/3 cup creamy peanut butter (approximately 3 oz)

  • 1 teaspoon chili garlic sauce

  • 1/2 cup salted peanuts (chopped)
  • 1/3 cup green onions (diced)
  • 1/4 cup fresh cilantro (minced)

Instructions

  1. Boil Noodles: Add a large pot of unsalted water to the stovetop and heat on high to bring boiling.
  2. Prepare Sauce: In a medium to large bowl, combine peanut butter, honey, soy sauce, peanut oil, seasoned rice vinegar, lime juice, chili garlic sauce, ground ginger, and garlic powder. Mix thoroughly until the sauce is creamy and thick.
  3. Cook Noodles: Once the water is boiling, add the soba noodles and cook for 3 1/2 minutes until tender but still firm.
  4. Drain and Combine: Drain the noodles and give the colander a light shake to retain a little bit of cooking liquid. Immediately add the noodles to the prepared peanut sauce. The cooking liquid will help loosen and coat the noodles evenly.
  5. Toss Noodles: Using tongs, mix well to ensure all noodles are thoroughly coated with the peanut sauce.
  6. Add Toppings and Serve: Garnish the noodles with chopped salted peanuts, diced green onions, and minced fresh cilantro. Optionally, add sriracha to taste. Serve the dish hot or cold according to preference.
